Spinach Salad with Warm Bacon Dressing

My friend S blogged about recipezaar the other day and it made me browse their site. Since the spinach was doing so well I decided to make a spinach salad. It turned out very yummy! I unfortunately didn't take a picture of the spinach before we inhaled it. The kids love spinach, I know how good it's for the kids so that makes me happy.

Check out what I found today

Lately I have been seeing a hummingbird in our backyard alot, now I know why. While walking around the backyard today checking out the fruit on our trees and noticed a tiny bird nest in our lemon tree. There were two tiny eggs in it, they were just slightly bigger than a jelly belly. What surprised me was that the nest appeared to be very soft (I didn't touch it). Joe was patient enough to sit down and wait for the mother hummingbird to come back. Go here for the pictures.

Our Little Garden, part 4





Well it's been about a month since I updated you on the progress of our little garden. Things are growing nicely and we have even been able to eat a little of the spinach in salads with dinner. I can't wait until the other plants are producing.

The fruit trees are doing nicely also there are fruit on all of the trees (apple, lemon, orange, peach and grape). Hopefully we will be able to get a good harvest before the birds this year.

Our Little Garden, part 3





I can't begin to tell you how much enjoyment I am getting from my little garden. I know that it is small and the plants are just seedlings but I find it very calming to just sit there and watch the plants. The pea plants are getting big enough that today I put up the trellis. I plan to trellis the peas, tomatoes, zucchini and the watermelon. All but the watermelon have sprouted. Also in my little garden are carrots, spinach, green beans, a few flowers, basil and cilantro. The fruit trees in out backyard are looking great also.

Our Little Garden, part 2






Well we planted the seeds in our garden two weeks ago and I was beginning to think that they weren't going to grow at all. Today when I went out to check there were little sprouts poking through the soil in several of the squares. I am so excited and can't wait until I am able to pick food to eat. It's not just the garden thats growing several of our trees have flowered and things in our yard are very pretty right now.

Our little garden, part 1



Alex has been very interested in plants lately and I have always dreamed of eating fresh vegetables picked from my very own garden. Last month I asked my father to build me a 4'x4'x 6" box so that I could make a little garden and he not only made one for me he came and helped stake it into the ground. About that time I was reading America's Cheapest Family and they happened to mention Square Foot Gardening (SFG). SFG is based on 4'x'4 boxes for gardening so I thought it would be perfect. I got the book for the library and have been following their advice on how to set up a garden. Today Alex and I went out and planted our first seeds. The weather has been great lately and I think that we will be okay as long as we don't have another cold spell (if we do I'll cover it in plastic and hope for the best. I hope to be able to show pictures of the garden as things start to grow.
